Red face Tour guides and what to see for first timers

I have seen Joyce Prince's name but I think that people on my cruise have already taken her but may be wrong!! I wanted to know what are the must see places to stop. I am a chef so the market and a lunch on the french sound right up my alley. I would like to get some history and end at a beach for an hour or more, not Orient Beach as it sounds kind of touristy....do not want to sound like a snob but I have been to many clothing optional places and it seems the one's who need to keep their clothes on are the who do not...sorry

If you can give me some ideas of some tour companies that can fill my requests, that would be fantastic!!!

One of the nicer things to do while on St Maarten would be to go to the sunset beach Bar and hang out and see why st Maarten's airport is on Ripley's believe it or not. a nice beach to visit before going to Marigot (The French capital where u have two type of cuisine) Local (Creole) as in Lobster, Garlic shrimps, fish etc. at the loulou's and you also have your choice of the the French outdoor cafés where u can get your bagets' (French bread), fishcakes etc. a Lil touch of Paris with a Caribbean twist. (smile)
Back to the beach would be Mullet bay it is a beautiful white sand beach on the Caribbean side of the Island and since all of the beaches are public beaches there is no charge. there is Beach chair and umbrella's that can be rented for US$ 4 or US$ 5 from the beach attendant selling drinks and BBQ on the beach. In Marigot you can choose to shop, have lunch or even climb the Forth over looking The waterfront. (Nice for taking Pictures) if there is people in your party that loves history then the Old House is a must after taking a short stop on the most popular Orient beach (I would recommend stopping at Kakau Beach for those who prefer not to see all the nudity on orient. the last stop before returning to the ship should be Philipsburg where you have the best shopping in St Maarten as that is the duty free haven with great prices. an since it 5 minuets from your ship it would be better to be closer than further away at the end of the day. I hope I was able to inform you sufficiently.
