Many of us have cruised around South America, I did Rio de Janiero to Valpariso (Santiago). We were on the Amsterdam but I am sure NCL offers similar excursions. I may have a name of guides that we used in Buenos Aries and Uruguay if you are interested!

Does anyone know the best month to go on a South American cruise. We always travel over Thanksgiving. Am wondering if that would be a good time to go.

I am in the process of planning our So. American cruise, so while I cannot speak from experience, I can give you some of the info I have picked up.
@Sandystamper - you don't mention what ports you are stopping in, but I have had very good luckplanning a private tour with Real English Tours in Montevideo, and have heard excellent things about GV tours in Puerto Montt.
If you are going to the Falklands, you need to book anything private far in advance, since most of the tour guides will be booked solid driving for the ships tours to see the various kinds of penguins. This year the rockhopper penguins have returned, so in addition to the Bluff Cove and Volunteer Point tours, there is the rockhopper tour, and it looks like almost all the regular private guides are being enlisted for the ships.
In Punta Arenas and Ushuaia, your choice of tours is bounded by how long you have in port. You can go with the ship's tours, but there are private companies, like Canalfun in Ushuaia and Patagonia Shorex and Turismo Viento Sur in Punta Arenas, that will work with you and your schedule if you want something a little different.
@Mloves2Cruise - We are going in December, between Thanksgiving and Christmas. The prices drop between the holidays, so we were able to have a nicer cabin. I've been told the best time is in December and January, since that is when it is the middle of the summer, the water is warmer and you can closer to shore in the fjords on the Chilean side. But Thanksgiving is pretty close to that time.
