Here's a well written response from Cruise Planner to a request for a dive location recommendation on another thread. (Which is that gave me the idea for THIS thread:

Cozumel is one of the premier places in the world to dive. I think it's a law that I have to dive everytime I go there! lol I'm an open water, advanced open water, and rescue diver with over 150 dives and it is one of the best places I've ever dove in.

It is truly amazing and if you go to Cozumel and don't go diving, you ought to be shot!!

There are several really good dive operations on the island that I would recommend. Two come quickly to mind; Deep Blue Divers and Aqua Safari. Depending on when your ship is arriving in Cozumel will define which to go with since Aqua Safari is a little more structured than Deep Blue Divers.

Planacar Reef is one of the places you have got to dive - it is awesome!

I've done some diving in Grand Cayman, but it's not as nice as Cayman Brac. Diving or snorkeling with the sting rays is a must do.

I've never dove in Jamaica. From what I understand it's not all that great.

And, more - this time, from Planners Edge:

There is a great wreck dive in Grand Cayman that I believe goes from about 45' depth to over 110' depth.

For you wifes first dives I would recommend diving the "flats" in Cozumel. This would be along the shore line between Punta Langosta and Chankanaab. The depths are bout 55' - 65' with amazing visibility. The drift speed is about 3 -5 mph. My recommendation for provider in Cozumel is Papa Hog's. They have mostly fast boats and are quite reasonable for "private" dives.

As I said before the diving/snorkleing in Jamaica is bordering on horrible.

Cozumel; Favorite Dive Destination

I must admit that Cozumel has also been my favorite diving destination up to this point. The reefs are plentiful, gorgeous, and accessible. We stayed in a villa on the far end, carpooled in to the private marina each morning and did two to three dives per day, for five days. We never once repeated a location.

The night wreck dive just off the downtown coast was one of my favorites.

Jacques Cousteau had it right, thats why he spent so much time in Cozumel. How can we argue with him?

Bonaire is another great place to dive. And the good thing is you can dive right in front of where the ship docks! Walk about a block and dive off the pier - saves money and you don't have to go far.
