Oh yes...I can tell you all about it! LOL! Sometimes I feel like a walking ad for Regent. I don't work for them...I just love that cruiseline and each time we sail with them I am more impressed.
Dining is freestyle on Regent/Radisson. Eat whenever you like. They are extremely accomodating though, so if you want to get the same waiter every night, or sit at a particular table, or join a big party of people...never a problem. They really do go all out to make you happy.
Regarding size of dining rooms I am not sure if you mean the main dining rooms or the specialty restaurants. The main dining rooms are big, but not as huge as the giant mega ships dining rooms. None of Regent's ships carry that many people, so it's more of a private yacht feeling....with 700 people on board you don't feel like you're on a cattle car no matter where you go. Regent is famous for one of the best space ratios at sea...lots of public space and not that many people...a perfect combination in my opinion.
The specialty restaurants are all different, depending on which one you go to and on which ship. Since it's all inclusive (no extra charge for anything) going to a specialty restaurant is something you should really take advantage of on Regent (Radisson). Especially since they are WONDERFUL! Think of fine dining in Paris where highly trained chefs are in the kitchen creating individual culinary works of art just for you. It's like that.

Per Regents website:
"There are four open-seating main restaurants plus the Pool Grill -a surprising number for a ship of her size! Waiters recruited from some of the world's finest restaurants and hotels provide RSSC's renowned "Above & Beyond" service. A choice of fine, complimentary wine is poured nightly, or a professional sommelier will be pleased to discuss alternatives available for purchase from the Seven Seas Mariner's wine cellar. However, if you wish to savor a meal privately en suite, 24-hour room service is available."
That was for Mariner, but all the other vessels also note open seating. With a ship like that I don't think you'd have much of a wait!

Let me help clear things up.
First, the dining venues vary by ship. On the Voyager and Mariner there are three dining venues: Compass Rose (the main dining room), Signatures (the Cordon Bleu dining experience) and Latitudes (the Asian-Fusion venue). On the Navigator there is one alternative dining "experience", Don Vito's. (The Paul Gauguin is different yet again, but only serves French Polynesia and probably isn't what you are asking about.)
Second, obviously in the two alternative dining rooms dining is by reservation, so it can vary. I believe the earliest seating is 7:00 pm. Don Vito's has a wine tasting before the diner experience. In the main dining room on all three ships, it is not "freestyle", but "open seating". There is a dress code. Seating opens at 7:30 pm.
Third, the main dining rooms are relatively small. They are single level rooms, tastefully decorated but really do not have a WOW factor. They count on the open seating format so there is not enough capacity for the entire ship at one time. This is usually not a problem, but it was on the Navigator this past August.
