Our second Hawaiian sailing on Princess was last December on the Golden. There will be two signup days for the free lei making classes (orchid and ribbon). They will be listed in the Patters and start around 9am (or 10am) so check your Patters each night til you see it. The Hawaiian activity desk is next to the shore excursions desk and there will be tickets for perhaps four classes for each type -- maybe about 20 tickets available, so they do go quickly. I think I got a ticket for the fourth class each time.
You don't sign up in advance for the heirloom lei making class -- but I think you pay about $18 for the materials. Leialoha (who is half of the musical duo that you'll want to hear perform) teaches those classes.
I don't think you sign up ahead of time for the uke lessons, but you will want to show up early to make sure you get one of the instruments (unless you bring your own -- that's what we did for our first Hawaiian cruise). If you want, you can take as many of the classes as you want, and at the end of the cruise, can participate in the passenger show.
There's also hula dance classes. I took some of those too with Leialoha teaching, and participated in the passenger show. You just show up for the classes and find a spot with enough room to sway and move those arms.
