Checked with Princess again today and got the same answer. 60-120 days before sailing. You might be interested to know that all excursions are only sold to about 50% on line. The remainder are reserved for sale onboard the ship.

That was one thing we liked when we went on the Caribbean Princess, we didn't think to book online until the excursion we wanted was sold out online. When we boarded the ship we had a flyer for excursions in our cabin. It showed the one we wanted that was sold out online, so we said what the heck, lets try and book it! Got it no problem at all! We later talked with the Shore-ex desk and they told us the same thing! "Only half of the slots get sold online!"

Also beach toys such as floating mats, snorkel gear, kayaks, paddle boats, etc, rarely get sold out completely so really no need to book way ahead of time!
We should have enough people checking that we will most likely be the first to book.
Maybe we could set up an e-mail list and when one finds they are available they will send e-mails to everyone. I will set that up if we want to do that.
