On a seven day cruise we will typically dine in Le Bistro twice, it is such a romantic setting.
On the Jewel there is a restaurant called Tango's, I am not sure what it is called on the Gem but it is on deck 8 on the Starboard side. It has very good TexMex type food in a very laid back environment.
We are not "real" steakhouse people but Cagney's is very good the few times we have tried it.
My wife absolutely loves Teppenyaki dining so we always go there once. It is not really my cup of tea but the food is good and the "show" can be fun if you have a fun table.
Of the main dining rooms the aft will be the more elegant due to the ceiling heights and the Grand Entrance. The mid ship dining room will be a little bit noisier with its' lower ceilings. But they are both very nice.
There are other options, but these are our favorites. With our next cruise being a 2 weeker we will have more opportunity to try everything at least once if not twice. The Italian restaurant has very good food, but can be difficult to get a reservation because it is one of the "free" restaurants. Blue Lagoon has some very good lunch time food. And there is always the Sushi Bar.
You will have a lot of options, so go and enjoy everything you can.
