We've been on both the Explorer of the Seas and the Caribbean Princess. And while we've not been on the Freedom of the Seas, we were on its sister ship the Liberty of the Seas.
In my humble opinion, the Freedom-class ships (of which the Liberty is a member) are basically the same as the Voyager-class ships (of which the Explorer is a member) except they are just a bit bigger (137,000 gross tons versus 158,000 gross tons) and offer a few more amenities. Because of they are newer ships and are more popular, the Freedom-class ships are demanding a higher price than the Voyager-class ships, but often I don't think it's really worth the difference. Guess it's a personal choice.
We had a group on the Navigator of the Seas, another Voyager-class ship, and the same group went on the Caribbean Princess. Everyone agreed to a person that while the Voyager-class ships have more amenities, especially for the younger crowd, Princess offered a more serene atmosphere with better food. So it really does come down to what you're looking for.
If it's an older crowd, you might also look at Holland America - great food, wonderful service, and very comfortable beds. Price is also very similar, but they do tend to cater to an older crowd.
Lots of choices, but no matter which of these you decide on, you'll have a wonderful experience.
