I've been to Belize & Cozumel.
I highly recommend the "Swim with the Dolphins" in Cozumel, if you might be interested in that sort of thing. Make sure you do the SWIM, not the other one, I think it's a MEET the dolphins? The SWIM will put you in the water with a dolphin. It's a bit pricey, but worth every penny
In Belize, we did a Zip-line through the jungle, which we really enjoyed, if you like that sort of thing also.
