You can check your table as soon as you get on the ship. It is listed on your sea pass card, which is like a credit card for your cruise. It also acts as a room key. The Card will say under your name:

Dining Room:
Seating:
Table No:

Although it really is one big dining room, each floor has a separate name.
Seating will be First or Second, and it will tell you when the doors open.

Don't be afraid to look at where you will be. If it is not to your liking, they will do whatever they can to make you happy. It may take an extra day if there were lots of requests though.
