Many people do book indy excursions. Just remember that if there's a problem (mechanical, for example) and you get back to the ship late, the ship might not wait for you. This can be pretty critical if it's the last Hawaiian port as if you don't get on the ship before it goes to Ensenada, Princess (and thus you) will get fined for violating the PSA act. And, as you can see by my last post, you can't be sure the ship will make every port.
So if you want to go to someplace a distance away, such as the Polynesian Culture Center, which is normally a 75 minute drive on Oahu...it's best to go with a ship's tour.
If you prebook an excursion, make sure you get a contact phone number so you can call if the ship misses that port. There was a couple on our cruise who had planned to get married in Kona -- they were meeting friends and family there -- so I imagine there were some sad phone calls there.
Some people will rent a car in every port to do sightseeing on their own, but on many of the islands, you can avail yourself of free or low cost transit if you want to get from attraction to attraction.
Oh, btw, we didn't have anything planned in Kona. We were going to go to a store to get more soda and cocoa mix for the girl (hot chocolate is pricey on the ship) And maybe check out an ukelele store (we have one which we did bring on our cruise as well as a guitar...there are uke lessons onboard, but only so many instruments available so the girl was able to use her own).
