Princess has a partnership with the California Science Center to provide itinerary-related science activities. One of the favorites is the dissection of squids. My daughter has made models of the solar system and glaciers, for example.

Some ships have classes (computers and others) so you can check to see what will be on your cruise and if there's an age minimum. On our last cruise, which was the round trip to Hawaii, there were ukelele classes taught by one of the musicians and it was open to all ages.

Probably the best "learning experience" for my girls was being around children (ship's children/teen program) from a wide variety of other countries.
