Question National holidays and school breaks

Every American knows most places are closed the first Monday in September, right?

Well, somebody on Cruise Critic said Labor Day is May 1 in Europe.

I want to go in May when the weather is perfect almost everywhere and there is no football on TV. That means I need to plan to travel AFTER May 1.

This led me to start thinking about other holidays: Do Portugal, Spain, France, Monaco, and Italy have other major holidays that month?

Also, do European kids get out of the school at the same time (early June) Americans do, or are they done in May?

I thought about going in April, but not all schools take spring breaks the same week and the Holy Week varies year to year, so that would be taking a risk.
