What is open dining? What are your thoughts on this? We are cruising Alaska on the Westerdam in June. Thanks!

Traditional dining is where you sit in the same dining room, at the same time, at the same table, with the same tablemates, and the same waiter & assistant waiter. Traditional dining on Holland is usually 5:45pm or 8:00pm and on the Westerdam is usually on the second level of the main dining room.
Open dining is where you go into another dining room, or in the case of the Westerdam, on a different level of the main dining room anytime between about 5:15 - 9:00. It's like going to a restaurant where you might have to wait a little while to be seated, but each night you eat at a different time, at a different table, with different tablemates, and a different waiter & assistant waiter. On the Westerdam, open dining is usually on the first level of the main dining room.
If you select the open dining, you can call up and make reservations up until 4:00pm so you can be seated right away when you walk up.
The menus are exactly the same.
