Southerners will equate fish with "fish fry with hush puppies"! Good eating!
But there are so many different ways to prepare fish of all kinds! I haven't met a fish I didn't like....some more than others, but they are all palatable.
One of our local restaurants specializes in fish and shrimp - mostly fried and boiled (the shrimp, that is) but my favorite disk is a fish on a bed of rice. Delicious!

I'm landlocked and my favourite meal is fish, grilled mediterranean style as they do in the Greek restaurants around here. Mostly bass, sea bass or mediterranean bass. Yummy!
I have yet to be brave enough to grill a whole fish at home, so I love to order it in restaurants. I wish they offered it on ships.
Salmon used to be my favourite.
In the restaurants we frequent, I always seem to order the same thing. Tonight we were at a local Italian restaurant and I had grilled veal scallops and veggies.
At a local lebanese restaurant, I always order the shish taouk (chicken brochette)
At a Vietnamese restaurant, I always order crispy noodles, veggies and chicken
Back to topic. Escargot are way too garlicy for me. I would never sleep afterwards!
In my youth (!), I visited the USSR and bought the REAL caviar. That was fabulous. Most caviar, I can take or leave.
I really am not so adventurous. I find that the older I get, the more I appreciate food that is simply and deliciously prepared.
Even desserts. When I was younger, I loved rich chocolate concoctions. Not any more. We recently shared one at the famous Demel in Vienna, and I found it way too sweet.

Here in Texas, if a restaurant in a small town or out in the country mentions fish on a sign, you can bet it will be fried catfish. With tartar sauce, fries or hushpuppies, and sweet tea. In the cities and upscale suburbs you are more likely to see something other than catfish on the menu, and it might actually be cooked without batter.
