My husband only eats a huge iceberg lettuce salad with tomatoes and chicken breasts for lunch and dinner. He also eats about a quart of egg beaters for breakfast. He has done this for years...He also eats a lot of fruit and is extemely healthy. What do you all suggest he do on our 14 day HAL cruise? I noticed a thread that said in 2005 HAL only had ceaser salad and mixed lettuce....which I love by the way....
We have many Holland vets here on CLF. You may want to ask this question directly on the Holland board and see if there's been some changes to their menu in the last few years and also how easy it is to make special requests.
I would guess that they do have more of a variety than what you've read. I know that on Princess they have an "always available" section of the menu that have standard items (such as chicken and steak) that you can get at any dinner. I always ask for a plain green salad, no dressing, and it hasn't been a problem for me. In fact, I'm a very picky eater and I don't go hungry on the cruise ship.
The cruiselines also have been adding more healthier fare to their menus too. Many ships will have low-fat options that are marked with a special symbol. Or will allow you to pre-request low-fat versions of their entrees. My hubby did this on one cruise and the head waiter came over every night to have him pick out what he wanted specially prepared for the next night.

I don't think iceberg lettuce, chicken and eggbeaters is a big deal. i'm sure they'll make eggwhites for breakfast for him and i'm sure they have iceberg lettuce and chicken on board.
It should not be a problem. Along with putting in a request with your T/A, I would suggest a discussion with your head waiter. They are very good at taking care of such things.
