We always have a plan A and B, both for places we have been before and new once. There are always something new and interesting to see even in ports we have visited a few times.
If an excursion is cancelled, we just play it by ear and a lot will depend on the weather. If sailing in the Caribbean and it's really hot, we may just decide to stay on-board. More than likely, wherever we are, we will at least go into town and walk around (unless the shuttle service is really expensive).
I'm a compulsive planner, and find planning a good part of the joy of traveling. So, I definitely always have at least a Plan B. That has come in handy lately, since it seems that an unusual number of my tours have been canceled on our last few cruises -- usually for lack of interest, which makes me think that perhaps I have some odd interests, since I've been choosing tours that few other people care about.

We sail in hurricane season so we sail for the ship not the ports, that said, it could be cancelled for bad weather, pretty much any reason, so we are never disappointed if we miss one or all.
Some people try to turn back their odometers. Not me! I want people to know why I look this way. I've traveled a long way, and some of the roads weren't paved.

I'm having trouble remembering which ones were canceled -- I guess I mostly remember the ones that weren't canceled. The only ones I can recall that were canceled for lack of interest were both in Grand Cayman -- one to Pedro St. James & the Botanical Park, and one for the Sea Spi. But I know there were others. A lagoon tour was canceled in Half Moon Cay, but I think that was due to an equipment problem, and in Hawaii the tour to Kilauea was canceled because of too much volcano activity.
Judy, you did not miss much by missing the lagoon tour. Besides our tour guide digging up a sea cucumber, a sea urchin, and a starfish for for us to touch, there was really not that much to the lagoon tour. Half the time was spent taking us across the lagoon to a mock up of a native village.
There was so much possibility and so little of it was realized.
