There are so many 7-day cruises. I think much depends on the itinerary.

Best for 7 day Caribbean: Freedom, Liberty or Independence
Best for around the world: Any Radiance class, preferably Jewel of the Seas.
Alaska: Radiance class in an aft balcony.
Transatlantic: Voyager class in either a hump or aft balcony.
Those are my picks.

For Alaska, I would suggest Princess -- any of their ships -- as they have been doing an excellent job in this area. I love the fact that there's a naturalist onboard for the glacier cruising. And I like that you have a choice between RTs and one-ways.

I agree with others, there are so many 7-night cruises from which to choose, it really is unfair to pick any one of them. It really depends on what you're looking for. And keep in mind that what one person likes, another will hate, so take recommendations with a grain of salt. Seek the advice of a good agent because they will get as much information as they can about you and help you find the cruise that's right for your situation. After all, they want to insure you get a cruise that will meet your needs and exceed your expectation. They want to make sure you are happy. They will help you decide based on your lifestyle, your needs, the itinerary, your budget, etc. Everyone is different so it's important for you to find the best for you.
As for a world cruise, each of these cruise lines only have one ship doing a world cruise; Regent Seven Seas Mariner, Crystal Serenity, and Silversea Silver Shadow. These are quite simply the best in the business - there are no better and between the three, I would have an extremely difficult time selecting one over the other because all of these are truly outstanding.
The next best would be the Holland America Rotterdam and the Cunard Queen Mary II.
All of the world cruises are available in segments or as a whole. And as with the 7-night cruises, it really depends on your lifestyle and budget as to which of these ships would be best for you.

Stopped counting after 110 cruises.
You won't get a definitive answer here. Your last ship was your best ship until your next ship. That isn't technically true. My favorite ship of all was the Norway which of course isn't anyone's best ship to cruise on any more.
