It really depends where and when. Going from anywhere on the east coast including SJ we will fly in that day if the ship leaves late. In bad weather or early departure we come in the day before. When we did Hawaii, we took 5 days before because it left form honalulu and we wanted to see Oahu.
Always day (or two) before. Winter air travel is not an exact science in our area. Friend of ours got to Miami just in time to fly over her ship as it left. Don't want to repeat that story.
We flew in the day of the cruise on our first cruise. Since then, we always fly in the day before. Problems can occur at anytime, but since we cruise in the off season, cold/snowy weather has to factor in as well.

Flying to Fl for the same day is out of the question for us. We did go same day to Vancouver BC, and had only a couple of hours to spare. So, never again. Still trying to get a decent room price in Ft Lauderdale, geez, they are expensive!

For local stuff we drive over on day of (L.A. or San Diego). We leave out of Miami on our next cruise and will be going several days early. I would love to adjust to the time change before the cruise starts.

I try to get to port as many days ahead as I can convince my DH to take off from work. Even when we left out of Galveston, we stayed overnight at a hotel on the island. (We got to meet fellow passengers also staying at the hotel, and I didn't have to worry about bridge traffic on the way. Our cruise was the same weekend as Dickens on the Strand, and traffic can be bad that weekend.)

Day of is my answer. We never get there the day before (and luckily we never get there the day after either) .
That's funny!!
Luckily, I too never get there the day after!
I am a 'day before' guy.
The airlines are so unpredictable nowdays. Do you watch that show on A&E, "Airline"? There was one episode where a lady was flying from Chicago to FL for a cruise. She arrived too late to board, missed her flight, and had a fit. Later flights would cause her to miss her ship departure. She had a fit about that to. It was all her own fault for taking a last-minute flight, and not arriving on time to board, but she wouldn't take any responsibility and blamed her troubles on the airline.
I've never taken a cruise from my homeport of L.A., or San Diego, so I would always fly in the day before for NY or FL departures, and at least a few days before for a European departure.
