We like traditional too. It's nice to sit down and the waiter already knows that I like lemon slices for my salad.

I like the flexibility. Some days the excursions are exhausting and I would regret picking a late dinner because I want to go to bed early. Or sometimes the jacuzzi is calling my name after all that walking...so I would really hate it if I'd chosen an early dinner. In other words, a fixed time for dinner would be a pain in the schedule for us.
But we usually eat in the specialty restaurant anyway. We meet up with our favorite people there...calling their cabin whenever we're all ready...whatever time that happens to be. And we always ask for our favorite waiter in the restaurant who knows our preferences. So we get extra special gourmet food, friends, and lemon slices too...but just whenever we feel like it.

Some people try to turn back their odometers. Not me! I want people to know why I look this way. I've traveled a long way, and some of the roads weren't paved.
This is kind of a hard one for me. I prefer the same table, waitstaff & tablemates since I believe I receive more personalized service that way and have better dinner conversations. However, I have been on 2 cruises with 'anytime' dinners that turned out fine. I'll admit it was nice not to have to rush to make a set time to eat. That flexibility, however, didn't make up for the loss of personalized service, in my humble opinion.
Cruising is life at it's best!
Traditional!! Love the idea of getting to know the wait staff and they get to know us and what we want each evening (like tons of ice for my water).

Stopped counting after 110 cruises.
Traditional for us too. I enjoy getting to know our fellow dining companions and having the same wait staff for the duration of the cruise. We will excuse ourselves for a couple of nights (on a two week cruise) to eat in the specialty restuarant.

We have done only traditional so far. I don't think I would mind open seating. Seven-seven thirty would be our ideal time for dinner. Latest eight. Eight-thirty is really too late, and there's no way we'll eat at six-thirty.
Having said that, if there were long lines at our preferred time, that wouldn't be so pleasant, to say the least!
If we would do an upscale like Julie, that would be different, but I don't see that choice in the near future. Mind you, I think Oceania has open seating. Am I right? That could be a future possibility.
Final word, the type of dining experience would not be my top criterion for selecting a cruise.
Let's just travel!!!
