I would do New Years on a ship in a minute. Of course, I would go on any cruise in a minute.
I think the ship should be positioned in the south pacific just inside the international date line so it could be the first place to celebrate new years. Then, it could sail East and over the date line, so that about 23 hours later, it could celebrate again and be the last place the celebrates it. Two New Years celebrations on a single cruise
