We've been to Cozumel many times and while most of the times, I prefer to go scuba diving, we've been all over the island. The one main thing about Cozumel is that you really don't need to book an organized shore excursion. Almost everything is available independently and something you can do on your own either cheaper, easier, or a whole lot less crowded than doing it through the cruise line, plus you are not limited to their schedule.

For example, instead of taking a tour to Chankanaab, you can simply take a taxi (it's not that far from the International Pier), and do your own thing. Same thing holds true for the snuba, the dolphin experience, and so on.

I don't recommend doing the Tulum excursion - first, you have to be transported to the city pier to get on a ferry to the mainland, then take a coach down to the ruins, stay for only about 90 minutes or so, and then repeat the trip back. It takes about 6 hours, can be very hot, and while the ruins are amazing, it's a very long and tiring day.

I would recommend to go by van or jeep, the waters can be pretty rough and you may not enjoy the ride??
