I'm woried about something here: Once I cruise X, am I ever going back to the others again?
Why worry? Either you will or you won't as the mood suits you. You'll find out soon enough if it's something that really works for you, but it's probably also important to have cruised a couple of other lines to have a point of reference for your opinions.
We'll be starting our 6th year of 'Celebrity-only' cruising next month (well, apart from river cruises, and even the Zenith can't navigate that territory!). We've had no inclination to go back to any of the other lines we've tried. Celebrity offers a combination of features that, added together, appeal to us more than the other 'combinations' we've experienced. Since we're not trying to or able to pick from a dozen lines, it's always just a matter of being a bit flexible in our schedule to get a cabin and itinerary that works for us. Booking a bit ahead or with an agent that has better-than-average access to cabin inventory makes that process easier. [re: cabin inventory -- fellow agents, I can already feel the bristles -- if that statement seems to contradict your reality, we can toss that topic around separately in a different thread].
I had considered switching lines in protest of a near-miss with Celebrity's shift in policies regarding bringing wine aboard, but it appears their crack marketing and legal teams have come to their collective senses (at least in part) and so our planned 'boycott' is off for the time being.

Chris, what is the latest info on the "new" policy? I haven't kept up with it.

In response to some email that was pretty clear about the consternation of some of their customers, they've replied in turn with emails to the effect that "we didn't mean it quite that way" and allowing for some reasonable amount of wine to be brought aboard at embarkation for a higher ($25) corkage fee.
I think CruiseArizona posted one, as did at least one other person. That thread should be down a page or two, and a couple of different email replies are provided.
So far, those that I've seen post that have cruised since the "new rules" went into effect haven't had their wine turned way at boarding.
That said, the TSA rules will require hauling it in checked baggage. If anyone needs packing trips, let me know. I'll jinx myself one of these days, but I've never had a broken bottle yet, and I believe I must have carried 150 bottles back from Europe and onto ships over the years.
Chris, They seem to not be making a big deal of bringing wine onboard other than the fact that the corkage fee is now the rediculous $25. We brough 6 bottles onboard and only drank one because we just didn't spend any time in our room and didn't want to pay the $25 corkage fee.
Perhaps on a longer itenerary or with a balcony, we could have easily taken advantage of the wine in our room, but it just didn't work well with our last Mexico Cruise. DH wants me to bring some to the Alaska cruise as we will have family onboard and might have a wine tasting party.

--Upon boarding-hearing the harpist play and being offered the glass of champagne
--Always a waiter, standing outside the doors to the buffet-wishing you a good day
--on sea days- waiters all dressed up passing out homemade ice cream
--iced wash cloths-offered when re-boarding
--the formal dining room, getting to know your servers and fellow tablemates
