At the risk of sounding like a member of the Port Canaveral or Cocoa Beach chamber of commerce (I'm not0 I would highly recommend NOT staying near the airport when coming in a day early.
Rent a car, drive to othe coast, and stay at one of othe many great hotels in the Port Canaveral or Cocoa Beach area. You'll have easy access to the beach, lots of great eating places, and a whole lot more interesting stuff to do than watching the traffic on the freeways surrounding the airport area. Plus, you'll be less than 15 minutes to the cruise pier, rather than the minimum 48 minutes (if traffic is good) that it takes to get to the coast from the airport of cruise morning.
check out the threads in this forum (including the 'stickies' at the top) to get an idea of some of the things there are to see and do in the Port Canaveral area:

this company is highly recommended for transportation from Orlando to Port Canaveral
