Actually, it could be later, to let them get last minute problems sorted out, and to go through all the procedures with the crew one last time. I think this would be especially true for first of a kind ships.
I need to ask who has been on an inaugural cruise to find out!

It'll be about the normal time. The reason being is that almost always, they have at least one or two (sometimes more) pre-inaugural sailings for travel agents and VIP's. These are 2-day cruises so agents can check out the new ship and tell everyone about them.
I'm actually on one right now on the Allure of the Seas. We left today and get back into port on Wednesday. They want everyone off the ships by 9:00am on Wednesday - this gives them plenty of time to clean the cabins and restock for the inaugural 4-day sailing that departs on Wednesday. It's possible passengers may be boarding a little early, but I would almost bet that they will start around noon.
