It seems there are new cruise ships in production. Not just newer ships but bigger as well.
Are the cruise lines taking some out of production or is it because of demand? Any word if Disney is planning any new ships?

As stated before, Disney has two 124,000 to be delivered in 2011 and 2012.

As far as I am aware, no cruise lines have taken any cruise liners out of production.

The main thing that drives the 'bigger is better' for new ships is profit.
The bigger the ship, the more profit they can make - it's that simple. If they made a bigger profit with smaller ships, you'd see a building trend accordingly. Also, with the bigger ships, the can offer amenities not seen before on smaller ships. And although most of us don't choose a ship for the amenities, many families do and that's the latest influx of passengers. Families are realizing the cost-effectiveness of cruising and the kids are intrigued by the 'wow' factor - it's a win-win for everyone.
And as was stated, the smaller ships are being used for shorter cruises, which have become very popular, and for cruises out of places where there was not much available in the past, such as Baltimore, Charleston, & Philadelphia.
I love the smaller ships - they provide a more intimate and relaxing experience. But then again, I love the bigger ships for their smoother ride and amazing amenities. The new Oasis of the Seas is incredible and I can't wait to see it.
As for Disney, you've already seen where they have 2 new ships in production - I would not be surprised to see them build a couple more within the next few years. They are expensive, but they definitely have a world-wide following.
