Dunn's is ok if you want to do what most people want to do. However, Jamaica is a beautiful island with many things to see and do. My suggestion is to book a tour with one of the local services. We went with Barrett Adventures and had a great day. We lucked out in that Carolyn had some cancellations that day and we were her only customers. However, even without that it would have been great, and they will tailor your day to your desires. It's not just a cut and dried format that you can't change.
