I once got an email from Princess about some 80 days prior saying that the excursions were available for booking online for the cruise, but when I tried to access the booking engine, I got the message that they were unavailable. Others on my roll call had the same problem. I called Princess and the CSR suggested I try again on a weekly basis.   I guess enough of us called and the excursions were available the next day.
I guess the thing to do is to keep checking, talk to others on the same cruise, and bug Princess.
