We went years ago, but we booked a ship's tour of Dunn's River Falls. The advantage was that we got picked up at the dock and got a boat ride to and from that place.
In the morning, we got a cab and after talking to the driver, bf (now hubby) decided to negotiate a tour of Ochos Rios. It was pretty interesting to have a native's viewpoint. But I would doubly make sure you get an official cab (your ship's newsletter will undoubtedly advise you on this) and make sure you feel comfortable with the driver. He showed us where the natives live, took us to good overlooks to take photos, showed us native flora (this doesn't include when he later offered us some ganja, which we turned down) and took us to the marketplace and came back at the appointed time to pick us up.
What I really wanted to do was to visit Goldeneye, which is about 11 miles from there, and is where Ian Fleming wrote most of his James Bond books. There were tours at that time, and I think that would have been so cool.
Coward Noel's Jamaica house is also supposed to be in this area.
