Pete we went during the week, and we did not get to see any work associated with producing rum either. (We went in 2005, and we got the audioboxes.) At the end of the tour, which was mostly historical, there was a demonstration by a bartender. That's it.
I felt that it wasn't a bad tour with the self-paced audio, but there were certainly more important things to see in San Juan. Victor's alternative sounds a lot better if you only have one day in San Juan.
